Aubergine And Potato By Tracey Ramseebaluck

Potato and Aubergine


Cut Aubergine into chunks and fry quickly just to get a bit of colour on them,put to one side in a bowl,par boil some potatoes and put to one side.


Ingredients


1 Onion sliced

1 Tomato chopped

4or5 cloves of garlic crushed

Few fresh Curry leaves

2 green chillies chopped

1tsp cumin seeds

1/2tsp fennel seeds

1tsp kashmiri chilli powder

1tsp Cumin powder

1/2tsp crushed black pepper

1/2tsp Amchur (dry mango powder)

Salt to taste 2tbsp oil chopped coriander to garnish.

Method


Heat oil in pan Add cumin and fennel seeds ,fry 20 to30 seconds, add Onions cook till soft and golden,

Add Curry leaves and garlic cook till rawness is gone,Add powdered spices stir Add a splash of water if needed so you don't burn spices,then add chopped tomatoes and chillies and cook till tomatoes are soft and oil starts to separate, Add in Aubergine and Potatoes can add a little if needed then cook on low till potatoes and Aubergine are cooked through, check for salt ,add chopped coriander.
