Me and Shai Ayoub decided we needed more veg in our diets.. so we decided to eat more healthy.. so today I present to you is Bhindi Aloo (Okra and Potato) A beautiful cheap and quick to make... this dish was cooked with frozen bhindi as no fresh was available.. and I tell you what I was surprised how good the frozen bhindi was..
Bhindi Aloo
Ingredients
1/2 kg Bhindi ( frozen or fresh )
1 onion finely diced
2 small potatoes chopped Into bite size pieces
4 garlic cloves sliced
5 green chilli (sliced)
1 tsp jeera whole
1tsp red chilli powder
1/2tsp haldi powder
1/2 tsp Dhania powder
1/2 tsp Jeera powder
Salt to taste
1/2 tsp garam masala
Fresh coriander
Method
Shallow fry the Bhindi in approx half a cup vegetable oil in a pan for 4-5min then set aside
In the same pan add cumin seeds and garlic fry until lightly brown.. add onions and sautée onions for approx 5min
Add salt and powdered spices and green chilli.. cook for approx 2min... add potatoes stir well cook for 10-15min.. until potatoes are cooked not mashed... add Bhindi mix well add fresh coriander cook for 5-10 on moderate heat.. enjoy with roti and salad... cheap and cheerful and delicious
