Chicken & potato curry
500g chicken
Chop 2 large onions.
Chop 2 tomatoes.
1 clove of garlic chopped
Whole spices:
1 bay leaf
1 cinnamon stick
3 cloves
4 cardamom pods
Powdered spices:
Prepare 1tsp turmeric, 1tsp chilli powder, 1tsp garam masala and 2tsp coriander powder. Set aside.
In a pan add some oil until warm then add the whole spices.
Add onions & and soften.
Add the garlic and cook through browning the onions lightly and slowly for 20 mins stirring occasionally.
Add the powdered spices with a splash of water. Add the tomatoes.
Now cook through until the oil separates from the mixture.
Then add 500g of chicken pieces. On or off the bone.
Mix it up over a high heat then turn the heat down. Leave for 15 minutes occasionally stirring. The chicken will release moisture.
Now add the potatoes and just enough water to cover the ingredients.
Simmer on a medium heat for 30 mins or until chicken is cooked.
Add salt to taste.
Serve with a sprinkling of coriander leaves.
