Chicken Curry with a Sri Lankan Twist

Another recipe I made up as I went along today, I asked for 8 chicken thighs from my Asian butcher got thighs and legs, not a problem... cut them up and it'll all go in the pot....

Chicken Curry

8legs

 8 thighs on the bone

 3 Tbsp yoghurt

 1 tsp Kashmiri chilli powder

 1/2 tsp turmeric

 Juice half lemon


Mix all the above together and leave in the fridge for at least half an hour or overnight....

2 red onions chopped

 2 white onions chopped

 7-8 green chilli coarsely chopped

 2 tomatoes chopped

 250g small potato

 2 Tbsp ginger and garlic paste

 4 green cardamon

 2 pieces cassia

 1 tej patta

 3 tsp cumin seed

 1 tsp black mustard seed

 1 tsp black peppercorns

 1tsp Kashmiri chilli powder

 1/2 tsp ground nutmeg

 2-3 tsp coriander powder

 1-2 heaped Tbsp Sri Lankan masala


Method

Add oil to the pot, and heat on a moderate heat, add your whole spices and cook for a couple of minutes

Add your onions and cook till turning brown

Add powdered spices and mix well, cook for a few minutes until the oil starts to separate, do not let it stick, add splashes of water as necessary,

Add chillies garlic ginger and tomatoes and mix well ... keep cooking until it forms a smoothish paste,

Add potatoes and chicken mix well and cook for a few minutes,

Add 2-3 cups of water and leave to cook until chicken is done.
