Recipe for Chicken Methi
Ingredients
800g Chicken thighs cut in to chunks,
1large onion chopped
2 Tomatoes blended
4tbsp oil
1tsp black cumin seeds
10 or 12 curry leaves
1tsp turmeric
2tsp ginger grated
2tsp garlic crushed
2tsp cumin powder
2tsp coriander powder
3tsp kashmiri chilli powder
1cup hot water
2tbsp yogurt
1cup fresh methi leaves
2tbsp kasuri methi
2tsp garam masala
5or6 green chillies slit
2tbsp chopped coriander
salt to taste.
Method
Heat oil in pan add black cumin seeds and curry leaves let them sizzle, then add chopped onions and fry till onions are soft and golden brown, then add ginger and garlic and fry till raw smell is gone,then add all the powdered spices mix well cook couple of minutes then add blended tomatoes and fresh methi leaves and green chillies mix and cook till oil separates,add tsp salt or to taste then add chicken mix well add cup of hot water bring to boil then reduce heat to medium cover and cook for about 30 mins,till chicken is tender and oil starts to separate, whisk the yogurt a bit and add to pan stirring so it doesn't split,then add kasuri methi cook for a few minutes then sprinkle tsp of garam masala and chopped coriander .if I can't get fresh methi leaves I have just used dried methi it still tastes good
