Courgette and onion Pakora
Grate 2 courgettes into a large bowl and add a finely sliced 1 red onion, I use a mandolin
Add
1 finely chopped green chilli
1 tsp each of garlic and ginger purée, from a jar is fine
1/2 tsp turmeric
1 tsp cumin seeds
1 tsp coriander
1 tsp Kashmiri chilli powder
Grinding of salt and pepper
Mix well and add Gram flour to bind, I used about 7 tablespoons
Form into balls and lower into hot oil , around 180 , careful not to splash
Turn them over a few times and cook until golden , it’s worth using one as a tester to see if it’s cooked in the middle.
