Mutton Karahi
RECIPE - easy peasy mutton karhai
1kg mutton leg (on the bone)
2 sliced onions
4 cubes of garlic ginger (frozen)
100ml oil
2 tej patta (Indian bay leaf)
6 green cardamoms
6 large tomatoes - halved
1 tablespoon salt (adjust at the end)
1 tsp whole jeera
1/2 tablespoons jeera powder
1/2 tablespoons coriander powder
1 teaspoon garam masala
1/2 teaspoon kashmiri basaar (you can use more to up the heat)
1/2 teaspoon Kashmiri chilli powder (optional)
1/2 teaspoon turmeric

METHOD
Heat oil, add garlic, ginger and meat, fry for 5 mins. Add remaining ingredients and give it a good stir. Cover and cook on medium heat, stirring occasionally to avoid catching, add 200ml hot water, cover and cook. Keep adding water when it becomes dry, until the meat is cooked and the oil separates. Check seasoning and garnish with julienne ginger and fresh green chillies if you like. Enjoy!
