Homemade Chilli Sauce Using Ghost Naga and Carolina Reaper By Shams Razzak

Home made chilli sauce using ghost naga and Carolina Reaper. 🔥🔥🔥


Ingredients


2 Carolina reaper de-seeded chopped

3 ghost naga de-seeded - chopped

1 large mango preferably ripe - flesh diced

6 cloves of garlic - chopped

1 large white onion - finely chopped

Half a cup apple cider vinegar

2 tablespoons olive oil

1 tin tomatoes or 5 fresh ones - chopped

1” fresh ginger - finely chopped

2 teaspoons sea salt

1 teaspoons cumin seeds

1 teaspoon cumin powder

1 teaspoon ground coriander

1 teaspoon garam masala

1 tablespoons sugar

500ml water


Equipment


Gloves

Goggles

Mask

Deep bottom pot with lid

Blender

Dish soap on standby, not hand wash because it doesn’t wash off the oil from chilli

Sieve/wooden spatula

Milk/yoghurt - in case you get carried away with tasting.


Method


1. Fry onions, ginger and garlic until translucent, add the rest of the ingredients and stir, let it come to a boil, cover and cook for 20mins on low heat.

2. Have a taste (just tiny amount) and adjust salt according to your taste. If it’s too think, add another more water.


3. Take off the heat and let it cool down before blitzing in the blender.


4. If you like it hotter, by all means, add more chilli but I wouldn’t recommend it.
