Lamb Kofta Curry
Ingredients For The Kofta
500g lamb mince
1 onion chopped finely
2tbsp chopped coriander
2or3 chopped green chillies
half tsp cumin powder
half tsp Coriander powder
1tsp kashmiri chilli powder
half tsp turmeric
half tsp black pepper
half tsp salt
1 egg
Method
mix everything together and make into little balls, i dont make mine very big ,I then fried them in a tsp oil just to colour them slightly and seal them so they don't break up .
Ingredients For The Curry
2tbsp ghee
1tbsp oil
2 onions chopped
2 Tomatoes chopped
5or6 green chillies slit
2tsp crushed garlic
2tsp grated ginger
4 green cardamom pods bruised
1black cardamom
1tej patta
1tsp crushed Black pepper
1tsp cumin seeds
half tsp fennel seeds
9or10 Fresh curry leaves
1tsp garam masala
2tsp kashmiri chilli powder
1tsp turmeric
half tsp cinnamon or a cinnamon stick
2tsp coriander powder
salt to taste
2tsp kasuri methi
Method For Curry
1to 2 cups hot water,chopped coriander for garnish.Heat ghee and oil in pan then add cumin seeds,fennel seeds,cardamom pods green and black,and 1tej patta, fry in oil for 30 seconds,then add onions and curry leaves and cook till onions are soft and golden brown, then add garlic and ginger,fry till raw smell is gone,then add chopped tomatoes mix well add powdered spices mix then cook till tomatoes are soft and mushy and oil separates then add kofta and green chillies and 1 to 2 cups of hot water mix then cover and cook till kofta,s are cooked through and sauce is consistency your happy with and oil has come to top add kasuri methi stir through cook few mins then add chopped coriander.
