Lamb Ribs With Shalgum(Turnips) By Shai Ayoub’s Mum

Lamb ribs with turnips

Ingredients:


1/2 kg lamb ribs

3 medium onions chopped

1/2 cup chopped tomatoes

1 tbs salt or to taste

1 tabs red chilli powder

1 tabs coriander powder

1/2 tbs cumin powder

1/2 tsp turmeric powder

1/4 tsp mace powder

1/4 tsp nutmeg powder

1/4 tsp clove powder(one may use whole 3 cloves)

1 cinnamon stick

2-3 green cardamom

1 black cardamom

5 pepper corn

1 tbs ginger garlic paste

1 tbs crushed dry fenugreek leaves

1/2 cup fresh coriander for garnish



Method:


Heat a pan add 5-6 mugs of hot water and add the ribs and all the ingredients except crushed dry fenugreek leaves,turnips and coriander.


Bring to boil on high flame then lower heat on medium flame,cover and cook until the water decreases and the oil separates(about 30mins).


Now add the turnips and fenugreek leaves mix well and keep on stirring ensuring it doesn’t stick to the bottom of the pan by adding water gradually


Cook until the colour changes(about15-20 min)


Now add 1-2 mugs of hot water (depending on thickness of the gravy) bring to boil then simmer on low heat until the meat is tender and cooked.


Garnish with fresh chopped coriander.
