Some fresh from the garden mint leaves to.... Mint Chutney/ Pudina with Dosa or Idli. Can be enjoyed with starters aswell.
PUDINA CHUTNEY / MINT CHUTNEY
My easy peasy chutney...
INGREDIENTS
1 tbs gingerly oil
1/2 tsp mustard
Handful curry leaves
2 tbs urad dal
2 tbs toor dal
3-5 fresh green chillies
2 cups washed mint leaves
Handful grated coconut
Thumbsize tamarind
Salt to taste
Method
Heat oil in a pan add the mustard seeds and curry leaves and let the mustard splutter.Then add the toor dal,the urad dal and green chillies and keep sauteing until they turn golden. Add the mint leaves and the salt.Take the pan off heat after 3-4 minutes, add the tamarind juice grated coconut to the pan.Once the mixture cools down, grind to a smooth paste.
