🌶️🍋🌶️ Quick Chicken Madras. My own concoction. It’s quick to cook because of not having to cook onions or tomatoes. All knocked up in my lunch hour. Recipe and method below🌶️🍋🌶️
Ingredients
3 diced chicken breasts
Lots of oil
1/2 bottle passata
2 teaspoons caramelised onion chutney (shop bought)
2 heaped tablespoons crispy fried onions (shop bought, pre cooked)
2 teaspoons fennel seeds
1 star anise
2 heaped tablespoons ginger garlic paste
1 tablespoon sea salt
1 tablespoon basaar
1 tablespoon chilli powder
1 tablespoon roasted and ground cumin
1 tablespoon kasuri methi
1 teaspoon ground black pepper
1 teaspoon garam masala
2 tablespoons lemon juice
6 sliced green chillies and extra for garnish
2 tablespoons coriander stalks, leaves finely chopped for garnish
Method
Heat oil in pan add fennel seeds and star anise and fry for 1 min
Add ginger garlic and fry until raw smell disappears
Add all other spices and lower heat and fry for 2 mins or until oil separates
Add passata and cook until oil separates
Add crispy onions and caramelised onion chutney
Add chicken stir and cover with lid for 10-15 mins until oil separates
Add fresh chillies and coriander stalk stir and continue to cook until chicken cooked through and tender and sauce thickens and reduces then add lemon juice and stir
Add garam masala cook for further 5 minutes then garnish with whatever you like.
