Shai’s Bombay Aloo Style Potatoes

Ingredients


A couple of tbsp of cooking oil

1 finely sliced onion

4 potatoes cut in to bite size pieces

1 heaped tsp cumin seeds

1/2 tsp turmeric

1/2 tsp chilli powder

Salt to taste

Fresh coriander and a green chilli for garnish



Method


Heat the oil in a large frying pan. Once hot add the cumin seeds and let is sizzle 30 seconds.

Add the sliced onions and the chopped potatoes.

Add the turmeric, chilli powder and salt give it a good stir.

Cover the pan with a lid and cook on low to moderate heat until the potatoes are cooked, stirring in between.

Garnish with fresh coriander and a finely sliced green chilli


Quick tip - you can par

boil the potatoes before hand if you wish, it saves on cooking time but I prefer to let it cook as described in the method.
